Throwback Thursday & A Berry Healthy Mojito

What was the worst travel experience you have had?

It was spring break of 2011, and my family booked a last minute Trip to Cabos San Lucas, Mexico. The first day at the resort was wonderful. We spent the entire day sun drinking cocktails and getting some sun by the poolside. However, being the stupid fourteen-year-old I was, chose not to wear any sunscreen. For the rest of the week, I was pretty much a vampire. Any sunlight brutally stung my peeling skin, so I stayed in the room, slabbing on the aloe and watching Pedro and Maria on the afternoon soap operas…yeah, not too much fun!  It was a drab being on a vacation only not being able to enjoy it. Finally, as our trip was coming to an end, the stinging pain of the burns began to ease, and I was able to spend my last day playing beach volleyball and sitting by the poolside with SPF 60 slathered on every naked part of my body the eye could see. In spite of the bad sunburn covering 85% of my body, the all inclusive we stayed at was beautiful – best spa I have ever been to (trust me, I have been to many spas worldwide) – and Los Cabos itself was a fairly clean, and tourist friendly area. If you are looking for a relaxing and warm getaway for your next vacation, I would recommend 100% to spend it in Los Cabos…just don’t forget your sunscreen ;). 

One thing I vividly remember of this trip, however, were all the wonderful drinks we had. Here is a sweet, delicious and healthier, almost zero calorie mojito recipe. Ever since we got back from Mexico, my mom has been making herself one of these at least once a week. My recipe contains no alcohol, but if desired, you would add about an ounce of or two of rum.

Skinny Blueberry Mojito


Makes: 1          Difficulty: Super Duper Easy!          Time: 2 min

In a highball glass, muddle 10 mint leaves, 1 oz of lime juice, and 1 oz of blueberries. 

Stir in 1-2 tsp of Truvia and 6 oz soda water
