Sunday Runday

Today’s exercise routine was well worth going the distance. I woke up with hardly any energy or motivation to do anything and to my luck volleyball practice was cancelled once again…so much for that second wind. Mom took Daisy Doodle out for a cross country ski out back and mentioned it was gorgeous outside, I figured I should go for a run.  I stuck my head outside for a minute…perfect weather for leggings and a hoodie.  WRONG! Halfway through I was ready to take off my sweater and run in my sports bra. It was also really wet and slippery out with all the snow melting. It feels great though when you ran through that odd small puddle and that cooling sensation from the water would hit your legs. My feet were certainly sloshing in my shoes by the last leg. Despite all the muck, It was great to clear my mind, listen to some tunes and get the endorphins going. I usually end up winging it whenever I go running…forget about the time, the distance and just go as hard as you can, for as long as you can. I can’t wait until the snow melts so we can get some sprint training going instead of doing the long distances. 

So tonight for Dinner we are making grilled chicken on a bed of  greens with grapefruit poppyseed vinaigrette. Yummers!! Here’s the Recipe:



1/4 cup freshly squeezed grapefruit juice pulp included

2 tsp  Oil ( I like to use safflower oil)

1/2 tbsp Agave or liquid honey

1/2 tbsp  White wine vinegar

1 tsp Poppy seeds

1/4 tsp salt

1/2 tsp Lemon rind

2 Skinless, Boneless Chicken Breast halves

Juice of 1/2 a Lemon

2  tsp Ground Pepper

1/4 cup Sliced strawberries

1/4 cup Cubed mango

2 Tbsp Chopped walnuts

 5 oz Baby greens


Marinade Chicken in lemon juice and pepper for about 30 minutes

Combine first 7 ingredients, whisk together and Set Aside

Grill chicken, flipping it every couple minutes until fully cooked 

Wash and dry greens and top with vinaigrette, walnuts, mangos, strawberries and grilled chicken

      I love salads! You don’t feel overly too full compared to eating pasta or other big meals. Even when it’s cold out it can be nice to go for a run! I love feeling so refreshed afterwards :)
