Snowstorms in Spring & Peanut Butter Sandwiches

This morning I woke up to a marshmallow world. Snow since 6 am has not been the most welcoming start to spring. On the bright side to today I get to come home to one of my favorite comfort foods that will get me through the dreariness of this never ending winter.

For my daily activity I was supposed to go to volleyball practice tonight…that is until it got cancelled due to this crazy weather. I was super stoked to see my girls and play some ball..guess I will have to wait till next week be going on the bike tonight instead :(  I also did my usual morning workout of yoga for 20 minutes. I often alternate between days of doing P90x’s Ab Ripper and Yoga in the morning. I find that working out, even for as little as fifteen minutes, right when you wake up is the perfect way to get ready to face the day to come.

    Anyways back to my spiel about comfort food. I will have you know this sandwich is not your typical PB&B, it’s a gazillion times tastier, decadent and not to mention healthier. Made with all natural nut butter, whole grains and my decadent chocolate in a jar recipe, this peanut butter and banana sandwich is a natural crowd pleaser.



2 tsp All natural nut butter. I like Almond Butter the most :)

1 tbsp Chocolate in a jar (click here for recipe)

2 slices Ezekiel Bread

1/2 a Banana sliced thin

Panini Press (I use a waffle maker and it works just as well)


Heat your panini press.

Evenly Spread one slice of bread with nut butter and the other with chocolate. Top with  banana and stick bread slices together to make the sandwich. Grill in panini press for about a minute or two. Serve with sliced apples with cinnamon and enjoy. Simple as that! Serves 1
