Today I woke up to a disgusting, yet friendly lick on the face by little miss Doodle. One of my biggest pet peeves is animals putting their saliva all over me, especially my face, I guess Doodle gets the exception just for today. I’ve got no idea how she got in my room last night..my door was closed. Oh well.. it was still sweet to lay in bed and have my cuddle buddy.
Usually I like to have breakfast that doesn’t take much time to make, considering how hungry I am in the morning. This morning, however, I figured it would be nice to switch things up and make some pancakes. I found a recipe in one of Fitness Magazine’s issues a while back and I altered it a little. These protein pancakes are so delicious and you would never guess they’re vegan.
I felt like dressing super springy and pink today for running errands with Mom. Graphics are totally in, so going for stripes, polka dots or checkers is a smart idea for Spring 2013

Here’s the recipe to my vegan chocolate banana protein pancakes:
1 scoop chocolate plant based protein powder
2/3 cup Old fashion oats
3/4 cup non dairy milk
1 Banana, plus additional for garnish
2 tbsp whole wheat flout
2 tsp Baking powder
Olive oil spray , such as Mitso
In a blender or food processor, pulse banana, milk and oats.
Add in protein powder, flour and baking powder.
Heat frying pan or griddle that is sprayed with oil to high. Pour about 1/4 cup of batter onto griddle and cook both sides.
Garnish your flapjacks with banana, walnuts, agave & my world famous chocolate in a jar
