Getting into the Spring of Things

Hey Everyone. I apologize for not being able to post anything on my site for the past few days as the server has been down. Anywho, yesterday I went for a long run and, being the klutz I am, rolled my ankle. I figured I’d take it easy today and do some spring cleaning. My room was such a mess, I couldn’t bare any longer with living in it. Five hours later and two garbage bags full of old books and clothes, I felt like a accomplished something. While cleaning up, why not move a few things around and redecorate ;)


Tonight my brother is also coming in for Easter weekend. He goes to university abroad so it will be nice to see him. I’ve missed him quite a bit.

Today I am posting a recipe I made my Dad for lunch yesterday. As usual, I completely wung it, threw a bunch of stuff together and hoped for the best. I didn’t even taste it. Later that day, however, I received a text from my him saying how much he enjoyed it and how I would have to post it on my blog; well here it is..


Spring Whole Grain Salad


2 cups quinoa cooked & cooled

1 cup of spelt cooked & cooled

1 cup brown rice cooked & cooled

1/4 cup dried cranberries

1/3 cup green grapes, sliced

1/2 tsp sea salt

1 tbsp chia seeds

1 tbsp poppy seeds

juice of 1/2 lemon

mint sprigs 


Combine grains, walnuts, cranberries,grapes & seeds

Drizzle with oil and toss together

Squeeze lemon juice on top, sprinkle with sea salt and garnish with mint

Enjoy :)

      Thank you :) It’s such a releif that everything is now organized. I find that when your room is already super clean, it is alot more motivating to keep it that way. The salad was really good, we had it again for supper the other night!
