French Toast Sticks with Heavenly Coconut Cream

Good Morning Readers!

Today I woke up with a larger appetite than usual and figured  what would be a better thing to eat than a delicious piece of fresh whole grain bread, dipped in eggs and buttermilk, and cooked to crispy perfection alongside a light and fluffy coconut whip that gets your punch of linoleic acid for the day.  My recipe is dairy free and guaranteed 100% to be delicious and satisfying! And besides how can you not love french toast in the form of sticks – it’s so much more fun to eat!

Buttermilk French Toast Sticks


Serves:4          Difficulty: Easy          Time: 10 min


1/2 cup Soy milk + 1 tbsp lemon juice

8 Egg whites

2 tsp Vanilla

1 Tbsp Truvia + 1/2 Tbsp cinnamon

4 slices whole grain bread, cut into strips


Whisk together first three ingredients in a bowl and dunk strips of bread into mixture

Coat strips in cinnamon-sugar mixture

Cook strips in pan heated with 1 tsp of coconut oil

Coconut Cream 

1/4 cup Coconut oil, at room temp

2 tbsp Coconut milk

1 tsp Vanilla

1 tsp Truvia


Beat coconut oil and beat in other ingredients gradually.
