Greek Quinoa Lentil Salad

Hey Readers!

Today in chilly Alberta, we are celebrating Family day…Woot, Woot! What it is, is a day in lieu meant for families across the province! I look reflect my times with my family and recognize how really blessed I am. Sure we may fight more than every once in a while, but I am so happy to have a relationship with them where I can pour out my heart to them without being scrutinized. In realizing this, it also saddens me that I do not have my brother here with me right now as he is in school down South.

So today it’s just me, the parents, and Doodle dog, and like every day since I finished school, I am making dindin! We were going to go out for a movie tonight, until we realized “mmmm…better not” as it was going to be jam packed at the theater and there was no point in going today when they have half price Tuesdays going on tomorrow.

Greek Quinoa Lentil Salad

Yield: 10 servings          Difficulty: Easy Peasy Lemon Squeezy          Time: 15-20 min


1 can Lentils, drained

1/2 cup Quinoa

1/2 small Red Onion, chopped

1 Pepper, chopped

10 cherry tomatoes, quartered

1 medium cucumber, chopped

1/3 cup Feta

1/4 cup Olive oil

1 Mint sprig, ripped or chopped

juice of 1 Lemon

1 Tbsp Soy sauce

2 teaspoons Worchestishire

1 Tbsp minced garlic

1 teaspoon oregano

1 teaspoon basil


1. Cook Quinoa and let cool

2. Mix together all ingredients and serve whenever!
